Warming Sage & Sausage Bake

Having just returned from a wonderful weekend in South Molton, Devon my flat was cold and uninviting...but a few minutes after putting this delicious one pot meal into the over that feeling had vanished.  The wonderful aromas (and of course the heat from the oven!) made me happy to be home.

This is a super easy dish to prepare...first up cut up some good quality sausages into an ovenproof baking dish

Roughly chop vegetables, I used courgettes, peppers and mushrooms, and add to the dish.  In a pestle and mortar crush a couple of cloves of garlic with a swig of rapeseed oil and a pinch of salt and pepper.  Once a rough paste has been achieved add in 5 or 6 sage leaves and give them a bit of a bash.


Pour this mixture over the sausages and vegetables and pop into an oven pre-heated to about 190C for 35-40 mins.


Delicious!
